🥣 Broccoli Cheese & Potato Soup


A simple, heartwarming recipe that fills your home with comfort.


Ingredients:

2 tablespoons butter

1 small onion, chopped

2 cloves garlic, minced

2 cups peeled, diced potatoes

2 cups chopped broccoli florets

3 cups chicken or vegetable broth

1 cup milk (or cream for richer flavor)

1½ cups shredded cheddar cheese

Salt and pepper to taste


Instructions:

1. In a large pot, melt butter over medium heat. Add onion and garlic; cook until soft.

2. Add potatoes, broccoli, and broth. Bring to a boil, then reduce heat and simmer until tender (about 15–20 minutes).

3. Use a potato masher or immersion blender to slightly puree the soup (leave some chunks for texture).

4. Stir in milk and cheese until melted and smooth.

5. Season with salt and pepper. Serve warm with bread or crackers.
